OSU to Present Wildfire Smoke’s Effects on Wine

On Feb. 14, Oregon State University and OSU-Cascades will host a virtual Science Pub that features Cole Cerrato, a postdoctoral scholar at OSU. Cerrato will give a presentation titled, “Clearing the Haze Around Wildfire Smoke’s Impact on Wine”. 

Wine grapes are especially sensitive to wildfire smoke; wines made with smoke-affected grapes may take on undesirable characteristics after fermenting. OSU researchers – like Cerrato – recently investigated how smoke affects the grapes and how its effects might be minimized.  

Cerrato will describe research conducted with Associate Professor of Enology Elizabeth Tomasino to share some basics of wine chemistry and demonstrate drinking techniques to enhance sensation.
